One of the unique features of the Smart Fryer is that it has a special setting to make twice fried french fries. This technique is generally regarded as the ultimate way to cook french fries. The first fry setting is at a lower temperature of 265F where the potatoes are essentially blanched in the oil. This allows the fries to cook through but does not brown or crisp the outside. After this first fry, the potatoes are pulled out of the oil and allowed to drain while the temperature is raised to a high 355F. The second fry at this high temperature crisps the outside of the fries while leaving the inside light and fluffy. Delicious.
The Smart Fryer has this twice fry setup in the preset options and I was very eager to try it out. I put the cut potatoes in the basket and lowered it in the oil at 265F and it cooked for the 4 minutes. Then I pulled it out and after it reached the 355F, I lowered the basket for the final 3 minutes. The fries were amazing and I loved how easy it was to make them with this unit.
There is almost nothing that I can say negative about the unit. There is only one thing that I do not like about the Smart Fryer, but it is not only this fryer, it seems to be all of them anymore. The power cord is attached to the fryer by magnets. This might seem fine, but any little bump on the cord and it could dislodge from the base unit, causing it to shut off. I have owned other deep fryers recently and they also had this same design. It is likely to do with safety, but it can be fairly annoying. Other than that, I love the Breville Smart Fryer. When it comes to premium deep fryers, the Breville BDF500XL Smart Fryer probably takes the cake and the pie too. It offers a nice and sleek exterior design fully functional with a LCD display. It offers a smart system of pre-setting your temperature and timer based on the food you’d like to deep fry. It’s even powered at an incredible 3000 watts to ensure your temperature stays consistent. However, for its price, I would have expected some sort of filtration system with the fryer to make it more convenient for your operator. Also, when people purchase a Breville product, their expectations are sky high, and not everybody was completely impressed with this model. We turned the Breville Smart Fryer on and began prepping food, and just nine minutes later, it was heated and ready to cook – we had barely finished drying our cut potatoes. In addition to having one of the fastest initial heating times, this fryer took only three minutes to recover its temperature after we added food, which is two minutes faster than the average.
Of all the deep fryers we tested, this one registered the lowest external temperature – only 90 degrees Fahrenheit. That’s thanks to its immersion-style heating element, which is an excellent safety feature. Also, its vented lid prevents oil from splatting around your kitchen and on you.
The Breville Smart Fryer isn’t difficult to use, but it does have a learning curve. The presets are meant to make frying easier, but you need to get used to the controls. You use the knob to scroll through and select from the menu of presets and set the timer and thermostat. This model includes an on light and an indicator that lets you know when the fryer is ready to use. The BDF500XL has a 4 quart oil capacity which can cook up 2.5 lbs of food at once. It includes a stainless steel cooking bowl and basket which are both dishwasher safe. There are preset cooking options plus a custom setting which lets you adjust the timer and temperature to whatever you need.
